Chris from Arkansas here. Baking for about 6 years now. Mostly breads, some pastries. I bake multiple times a week and all the bread that we normally eat. Big fan of lean doughs.

We are neighbors from Texas! What defines a LEAN dough? No oil or fats? Enlighten me, please.
