Hi i ve seen a professional mixer which has an extra scraper bar which turning while the dough hook stil operating can anybody enlight me?Tank you all in advance.

Hi,
This is the dough breaker bar (if it is a spiral dough mixer.) Otherwise dough would simply wrap itself around the spiral and turn around and around. The breaker bar separates and folds the dough.
