Welcome to TFL.  It is good to have another UK-based baker join the ranks of TFL - and one who has built a wfo as well!  There is a wealth of advice on bread baking available here, just try the search box at the top left of the screen and - if you can't find an answer to your question - just ask!  There are quite a few of us who are based in the UK and one or two even have their own wfo.  Look out for ananda (Andy) who is a very experienced professional (and home) baker who has started his own business, part of which is devoted to baking and selling bread (the other part is baking consultancy).  Also lumos, who doesn't have a wfo but her baguettes look delicious.
