Whole Wheat Bread

Hi,

Has anyone come across a whole wheat bread recipe using molasses and honey? If so, has anyone ever substituted the honey with more molasses? or Has anyone a recipe that uses only molasses?

Hi,

Yes, I've made whole wheat bread using molasses only.  Of course it is not as sweet as honey and will make the bread a bit darker and impart a hint of molasses flavor, but other than that I found I could replace the honey with molasses without consequence in terms of the mechanics of the bread rising, hydration, etc.

The recipe I used was the Tassajara Bread Book whole wheat bread recipe.

Thank you for your response. I am  very anxious to rtry it although the recipe I have turns out great bread. Sometimes if it ain't broke I hate to fix it but I am gonna try just using molasses.

I will definitely let you know how I like the taste of the bread with molasses. I love the recipe and it is one of the softest and the most moist I have eaten. I am a big pb n j fan and I ate quite a few mieces of bread smeared with the stuff.

...I made was sweetened with a combination of molasses and honey.  This bread also contained spent grains from beer-making which I find somewhat sweet as well.  The honey was added because I ran out of molasses.  To be truthful, I didn't like flavor as well as that bread when I use only molasses and the spent grain.  I guess I would use either molasses or honey.

Are you using blackstrap or golden molasses? The blackstrap will give a much stronger flavor. When I make molasses cookies, I use a mix of both. 

It is Grandma's Brand Gold Standard Molasses Unsulphered. I have been wanting to try black stap molasses as I heard much  about it when I was growing up.

I've been using a barley malt. It gives it a kind of molasses flavor. I made a loaf with it for a friend at work, and she liked it...I assume so, as she asked what it was. It was made with wheat flour, so when I offered to make her another, she only requested it be white...nothing about the barley malt.  The bread I'm making today has it...can't wait to taste it. Normally I put 1 Tbl  but today I eyeballed it.  Pretty sure it was more than a tablespoon!
