Cinnamon Buns - use retardation?

The kids and grandchildren are coming for Thanksgiving, and I want to make with them Rinehart's Cinnamon Buns, using his Poor Man's Brioche.  I'm hoping we can prepare the dough the evening before, and bake in the morning.  Will this be possible?

Just make the buns as you normally would but on the final rise only let them rise about half way then cover them and put them in the frig. They will finish rising in the frig overnight...then when you are ready to bake just preheat your oven and stick the rolls in right out of the frig.

I make my rolls ahead this way for our holiday meals...I've been doing it for years and it works just fine.

Both our standard family cinnamon roll recipe and the sourdough cinnamon roll recipe on this site call for the rolls to do the final rise overnight in the fridge, and it works great.  Just roll and cut them, put them in the rising container (baking dish or sheet, cover with plastic wrap (allowing enough slack for the rolls to rise), and away you go.  I take them out of the fridge when I turn on the oven to heat in the morning, but you can probably put them in the oven straight from the fridge with no difference.

Thank you both, BettyR and sPh. I'll follow your suggestions. I'm sure they will be good, and my granddaughters will have fun making them.
