renting or leasing deck oven
Hi all,
Is there anywhere that I can rent or lease a steam injected stacked deck oven? I am looking for a bakery to rent space that has such an oven and it has been very hard to find. I live in LA and don't think that there are many bakeries that have this type of equipment. Any feedback would be appreciated.

Hmm.... Talk with the companies that make deck ovens or even your restaurant supply store. Sometimes they might have connections or they might be able to let you rent one. A friend of mine that is a chef de cuisine at a brand new restaurant in town found most of his restaurant equiptment/machines that were used for dirt cheap at a restaurant supply store.
Also, I sometimes see old bakeries/restaurants or even culinary schools try to get rid of old ovens, so you might be able to pick one up cheap. I went to Le Cordon Bleu of Dallas just a few weeks after they got all new deck ovens and they sold their old ones for a good price.
