Interesting (near the very end) how the old bread (instead of being thrown away) is dried and used 1:1 mixed with wood pellets to burn and heat the ovens in the bakery. Why so much waste? The biggest problem is stores maintaining full shelf stock into the evening for late customers. Then the shelf is emptied for the next day's fresh bread.
