Hello again from warm Arizona,

I see a few options at stores but am not sure what is reconmended as there is a variety.

 The recipe for the  soaker It says oats. What kind recomended?  

It says Cracked Wheat. What kind recomended?

 One of the flours in a recipe is  Wheat bran.  What kind is recomended.

     Having only made white bread and sour dough bread.  These items are confusing me as to what kind to purchase.

It's warm today in Arizona!  Love it!

I would check out some flours from Bob's Red Mill.. you can also find a specialty store.  Not sure where you live in Arizona, but if you're anywhere near Gilbert, you can look at Shar's on Gilbert Road.  They will try and sell you a wheat grinder, but they have a pretty wide selection of Bob's Red Mill flours.  Wheat bran is a basic ingredient and can be found in most stores like AJ's or Sprouts.

I have seen your posts a few times and a few comments on some of mine also.  I am in Surprise not to far from Gilbert. I looked at sprouts local . Did see some from Bobs Red mill and looked at his web page also.  They have bulk wheat bran I think. 

 Oats have 3-4 kinds steel ect.  Once  I get the type used down then I can get what ever is needed. I hate to buy some thing I do not need or buy more than I will ever need as it is hard for me to store in a motor home for 6 months. 

Might ride over to Gilbert be a nice ride any way.

What exactly does your recipe say in terms of the oats?  If you put the formula out here, I bet someone can better direct you.  I don't do sourdough - no one in my house cares for it and I'm not a huge fan, so I'm not sure.

I do know wheat bran though and I've seen it in the bulk bins at Sprouts and I've seen it in smaller bags at AJ's.  I have a bran muffin recipe from Ciril Hitz that I want to make and I need to pick some up myself. 

They have it in big bags over at Honeyville Grain.. right behind Chandler Harley Davidson.  You might call and ask them what they have and how much of it they have.  They deal in 25 and 50 lb bags of flour and that's where I buy mine.. but I know they have spelt and all sorts of oats and grains there.  You can call them and I'm sure they'd be happy to be of help.

PS  Call Shar's before you go there.. her stuff is high priced in my opinion and they don't have much in the way of those of us looking to knead or work dough by hand or by spiral mixer.  She tries to sell things that go with her Bosch mixers.. since she's a Bosch retailer.  I couldn't even find a dough scraper there the other day!

  • I have used John McCann steel cut outmeal with excellent results.  The McCann oats are basically cracked oats.  They're from Ireland and are available online (28 oz. cans).  They keep indefinitely.  You can also buy oats and crack them yourself if you have an atachment for your mixer (DLX), etc.

  • I have purchased whole grain wheat from Bob's Red Mill and cracked it myself (DLX) which is always excellent.  Bulgar wheat is also available online from various sources.

  • You can use any type bran, usually available from a health food stores, depending on which bread you're baking (rye, wheat, etc.).

King Arthur is also a good source.  They sell a mix of grains for soaker that I have used with good results.

Hey Folks

Thanks for the input. Sure save me a lot of $$$ in not buying the wrong flour. Now that I have a idea what to get.  Very much appreciated. I have never done a soaker before so I did not want to get a lot of flour that I cannot use . Will print the emails out and have a good backup.
