Bagel board clips

Bagel board clips

I bought a bagel board but can't figure out how to use the clips, which I thought would be springier. Do you bend them in?

The clips should be bent, and then slid in, usually diagonally to hold the cloth at each end of the board.

I googled and saw images of flat boards and clips, but I have no clue how they are used and what a bagel board is supposed to look like.

Curious minds have to know ;o)

Here's a video showing how it's done.  Starts at 2.09.

Quite doable with a deck oven like the one shown, but not so convenient with a home oven.

Didn't see any in use there.  Just narrow boards for flipping bagels.  ????

Immediately after boiling the bagels, place the bagels on bagel boards.  You can use wooden or aluminum boards covered in burlap.  If you are making seeded bagels, remember to layer the board with seeds prior to placing the bagels on the board.   Additionally, once the bagels are on the board, you can add seeds onto the top of the bagels.  You can now place the bagels in the oven.  In a revolving oven with 3 shelves, after 2 rotations, flip the bagels over.  In a five shelf oven, you should flip the bagels after one rotation.  The ideal temperature for your oven is 500-550 degrees Fahrenheit.
