All I want is a dual-mode, temperature-controlled proofer that will switch from one temperature (cooling) to another temperature (warming) at a prescribed time. That's all I really want, but I cannot claim to need it.

I'd like an outdoor kitchen, complete with a wood fired oven. This really is a dream, because I live in a small apartment in New York City.
Santa knows what I want.
It begins with "sh" and ends with "eeter."
I've been oh, so good this year.
And I always leave him cookies and single malt Scotch whiskey...

I made delicious Chile Verde with Red Rice for dinner last night (Mexican Christmas colors for a nice Jewish boy and his Norwegian wife and her family). The Pomegranate Margaritas were a nice pink complement. Heating up tortillas doesn't really qualify as baking, I guess.
After a few cocktails and an incredible dinner, I concluded I have everything I want.
Today I'm making Trailrunner's apple crostada for dessert after my brother-in-law cooks his goose. My version of the apple filling is laced with Pyrat Rum.
My sourdough starter is chomping at the bit for the upcoming baking.
May you all be happy what you have (especially if you have a steam oven, a sheeter and/or a wood fired oven ...or just good cocktails and family).

Sounds all wonderful, Glenn, what a nice ethnic mix. We Main-ahs will just have lobster with broccolini this evening (plus Mohnstollen as dessert), and tomorrow we're invited and don't know what we'll have.

Forgive me for being totally off subject on this. Every now and then during a musical performance, all the stops come out and everybody goes wild. This is one of those moments that is worth watching to the end. Enjoy this Christmas Music.
