Bread can be so beautiful...
I know this is not the perfect bread, and quoting Hamelman, "If the holes are big enough to hide a mouse, your shaping skills need some attention", but I love my bread anyway.

The random holes are large due to lengthy fermentation, and not sudden oven expansion. The crumb is wonderfully even, in the sense there is NO compactness of crumb to be seen...especially at the base of the loaf. And...a moist crumb shiny and reflective to the point of translucency.
It does not get much better than this; I venture to suggest the esteemed author who you refer to would agree with my assessment too.

Seriously though, that bread is beautiful. I hope one day to make bread like that.
