Chicago Hard Rolls
Does anyone have a recipe for "Chicago Hard Rolls" - the kind you would be glad to put Panetti's Italian beef on? (if you know about the South Side and Roseland in the 50's you understand) I have a recipe for authentic Chicago Italian beef, but I just have not been able to make a Chicago hard roll that makes the grade.

Make them without the onions for plain rolls.
The Kaiser rolls in Peter Reinhart's Bread Baker's Apprentice are great hard rolls also.
