Carrot Cake with Mascarpone Maple Cream

I was just reading about this lovely Italian cake the other day and the Marscarpone Maple Cream frosting sound's amazingly delicious. I will give it a try. We had to buy a hugh bag of carrots the other day to get the organic ones.

Do you ever list the ingredients by weight on your blog?
