Hello from Arkansas! I have not been on the forum for long and have mostly lurked so far.
I love homemaid bread, especially the rustic artisian breads! I'm new to bread making. I probably have 15 bread books and have read them cover to cover, but have not felt up to the task. This week I decided to make the Poolish out of Peter Reinhart's The Bread Bakers Apprentice. That was three days ago. It has been in the refrigerator since. Today I am making my first "artisian" bread. I'm making the Ciabatta from the same book. My youngest son Zack has been helping. REALLY looking forward to the finished loaves.
I made a second Poolish while the dough is relaxing and its in the refrigerator.
I'm hoping to start baking bread on a regular basis a couple times a week. I have a hearth stone on the way from my oven, a couple of linen lined bannetons, and a KitchenAid Artisian mixer on the way (I have been wanting one of these for years). I'm looking forward to developing my bread making skills.

As you have seen while lurking, this is not the place to come to try to be talked out of baking bread! Everyone here is an enabler, so expect the addiction to be complete.
