Pullman Pans
I was just given 2 pans called Pullman loaf pans. They measure 12 inches long, 3 1/2 inches wide, and 3 1/2 inches deep. They have a sliding lid that will keep the risen and baked loaf uniformly rectangular. Does anyone know what the correct dough capacity is for these pans. Thank You, you bread geniuses :-) !

It probably depends on the recipe; how much it rises. I would think, just pick a recipe, and fill the pan as suggested/pictured.
KAF has several Pullman Pan(Pan de Mie) recipes. The basic recipe has about 40.8 ounces of dough.

A few of the formulas in "Bread" that I've been looking at say they produce 1 pullman loaf and are all in the 3.5 pound neighborhood.
I don't have the answer but just want to say how lucky you are. I wish I had one of those. Have been longing to make square sandwich bread for a while. Can't wait to see some of your pictures. Al
For what it's worth this is two of my Pullman loaves, one is white the other is fresh milled whole wheat. the loaves are 13 inches long, I did both the same weight each being 30 ounces dough, this was my results, no rounded corners and no thick top where the dough was trying to get out,
I sprayed my pan and lid with Pam. BTW the pan is from Chicago Metal. qahtan
