9x5 is a 2-pounder, 8½ - about 1.5 lb.  Basically, for a liter of volume you need 500 g. of dough.

My dough is almost warmed up from a night in the frig. Now I know how to separate it.

I use between 500 and 600 grams in a typical 8 1/2 x 4 1/2 pan, usually around 540 for most breads.  I don't use the large 9 x 5 anymore because that is just too much bread for two of us.  For smaller pans I just use a ratio based on volume.  One quick way to compare volumes is to fill the 8 1/2 by 4 1/2 pan with water while on the scale.  It's weight is now my base.  Do the same with smaller or large pan and just follow the same ratio.
