My first loaves
I made four loves yesterday and they all turned out. After reding sooooooooooo many recipes, I came up with one that seems to work. The recipe needs just a little tweek. Little more water and salt. I did not retard in the frig but next weekend I will not skip this step. I just couldn't wait!
The crust turned out nice and crusty and the crum is super light and soft. The crumb does not have big holes in it but you can see some. The dough was kind of stiff for sour dough.(I think).

You seem to be really into bread, with a desire to expand your knowledge and your bread repertorie.
If you ever wish to take the next step and buy a good bread book, I think you will learn a tremendous amount from Jeffrey Hamelman's, "Bread, a Baker's Book of Techniques and Recipes."
Some have the opinion that this book is not for beginners, but I heartily disagree. Had I started out with Mr. Hamelman, I would have avoided many failures and frustrations...and saved a few bucks in the process.
BTW, nice scoring pattern.
I've never seen a slashing pattern like the one on your loaves before - it's so lovely! I will have to try it - it's beautiful!
