Anyone in the SF bay area interested in whole wheat flour from Central Milling?
Hello Fresh Loafers! Long time lurker, first time posting.
In my quest for sourcing good whole wheat flour, I called Nicky Giusto at Central Milling (www.centralmilling.com) asking about prices and shipping. I knew that Central Milling produces Whole Foods 365 Organic Unbleached All Purpose flour, and that Frank Sally at SFBI highly recommended flour from Central Milling so I figured I'd give it a try. To my surprise he said I could swing by their warehouse in Petaluma and buy flour directly (gotta love that!)
I'm planning a run to their warehouse tomorrow to buy whole wheat flour, specifically Organic Whole Wheat Hi Pro Flour Fine, and anything else that catches my eye. This is the whole wheat flour they developed for Acme bakery's whole wheat products.
Someone at the warehouse might be able to break down a 50 lb bag into something more manageable. But if not, is anyone out there interested in splitting a 50 lb bag? I'm sure it's great flour, but I still prefer to try out a smaller quantity. If you're in the SF Bay Area (I'm in San Jose) and are interested, let me know.

I'm in Mountain View and and I don't need any WW flour right now (or any other flour since I have 100# of bread flour and 50# of pumpernickel from Central Milling in my kitchen)but I'd probably be interested in sharing flour in the future. It's a long drive up there and I don't want to do it very often. They also have Type 70 & 80 (high extraction) flour that I'd be interested in splitting with you or anyone else sometime in the next few months.

When I went about 2 months ago Nicky was really helpful and spent quite a bit of time helping me understand everything he had in the warehouse. I was surprised at how willing he was to help someone who wasn't going to buy large quantities.

I ended up with 100 lbs flour: 50 lbs Organic Whole Wheat Acme Hi-Pro Fine and 50 lbs Artisan Bakers Craft (white flour that includes malted barley flour) which is way too much for me but Nicky threw in the Artisan Bakers Craft flour for free since the bag had been punctured and taped up, so was unsellable to a bakery. How could I refuse?

Perry: Isn't it great when you find out you had a goldmine in your backyard? The website is bare bones at the moment - it just provides Nicky's phone number and email address for contact info.

All these people who are close to me. I live in Los Gatos and work in Mountain View. I started baking about 4 weeks ago. I did visit Costco to get some Organic All Purpose but would like to spend about .25 a pound instead of .50.
I also get lucky because one of my co-works drive right by the SFBI and he has been stopping for me to get some baskets for me.

It's almost Thanksgiving time; the weather is getting cooler, and Christmas is around the corner, which means lots of baking so I need to restock my flour. I'm planning a visit to Central Milling in the next few weeks (as soon as I get in touch w/ Nicky Giusto).
I'm looking to share another 50# bag of Organic Whole Wheat High Protein Fine flour. Message me if you're interested in sharing that specific flour.

There are soo many choices. Right now I am at this only 4 weeks and really have used only All Purpose and some Red Mill Rye. I did buy 20 pounds of organic Central Milling all purpose flour last week from Costco. I want to find a good pumpernickle but sticking with my Rye (I might run out this weekend).
I have found how to store more flour and not get it in the way. I found on a long term food storage site a place to find food quality buckets. I went to Safeway and got two buckets that used to store German Choclate filling. I will be purchasing some Gamma seals to seal them. I also checked the last time in Home Depot and their handy buckets are food Quality (The Recycle Symbol should be a 2) but will probably try to get free ones first. I am planning on brinning a turkey in one this comming week.
So what does high Protien flour do for me? I have been using King Arthur All Purpose flour and it has worked well in my loafs. I am soo confused but Im glad there are lots of places to read about.
I am looking to find someone to share some flour from central mills. I could actually share a bag of all purpose and bread flour (Or get 2 bags of each) and find a way of getting some pupernickle but don't need 25 lbs of it. If any one is interested I have a friend in Mountain View who is interested but will need a 3rd or 4th for the pupernickle. If any one is interested shoot me a mail at coffeetester@gmail.com
