finally made some of that progress....
just some pics from yesterdays bake. next time, i will do the second proof longer, increase hydration slightly, and reread scoring tutorial. not sure why the other side didnt get spring. maybe i didnt score deep enough?

I'd say that looks awesome! The scoring opened up in a very huge way! Your loaf looks like some of the Zingermans 'Rustic Italian Loaves' I see come in each morning.
Perhaps though someone more advanced at baking can assist you on your question, but I just wanted to say it does look rather nice!
Looks like your oven spring was in the direction that you directed it in. You scored across the top but scored sideways, so the dough will spring out in that direction rather then on both sides.
Next time you can try scoring both sides in the same way or scoring straight across from the top rather then the side.
