Banana Bread Going Bananas - "Bananas ONLY" Bread

I just wanted to share a successful (provided you are VERY fond of bananas) experiment: the "bananas only" bread.
This is not a proper recipe, but more of a method.
Take any wholewheat or dinkel rolls recipe (if you are using a sourdough process, follow standard procedures until you reach the "baking day" or "final dough" stage). Then substitute ALL liquid in the recipe with equal volume of mashed, ripe bananas. Omit any sweeteners or fats included in the recipe - the bananas are moist and sweet enough - but do include salt.
Bake according to recipe.
For variation, try one or several of the following additions:
ground cinnamon, ground cardamom, nuts, seeds, raisins, apricots
Some suggestions for toppings when enjoying these rolls are:
simply good quality butter
peanut butter
Turkish youghurt
cream cheese
blue cheese

Thank you for this great idea, Eva. I make a quick banana bread raised with baking powder in which I substitute all the liquid, including fat, with mashed bananas. I've never tried the method when making rolls, however. When I'm buying groceries I can't pass up the inexpensive bags of overripe bananas, and I mash and freeze them.

And I thought I was the only one who couldn't resist those "inexpensive bags of overripe bananas"! :0)
Came to think of a couple of other toppings that will go very well with the banana rolls: to eat them "Norwegian Style":
spread with "Seterromme" (very rich and delicious Norwegian sour cream) and topped with "Gammelost" (a tangy cheese made entirely from fermented whey)
or
good butter and any sharp white goatmilk cheese
Sadly, "gammelost" is no longer to be had here in Sweden. Thank goodness our cabin in Harjedalen is only 120 Kms away from Norwegian town Roros, so I can stock up on gammelost frequently!
I made two loaves of your "bananas only" bread yesterday, Eva, and had a slice for breakfast. I warmed it in the microwave and spread it with peanut butter. Yum!
Next time I'll make rolls as you suggest. The bread required a long bake, and the crust became quite dark.
