Hello from Vancouver BC

Hi, all. 

Just wanted to say hello and thank-you for the wealth of information on this site.

I've been baking bread for about 20 years now. I've been having a great time these last couple weeks trying some of the recipes and suggestions I've found here. I'm starting my first sourdough tonight with my newborn (6-day-old) starter.

Welcome to TFL, Don!

To both you and cake I would say, about newmade starters, don't be too surprised if you don't immediately get a great rise or great flavor in your initial baking attempts with your starter. It takes a couple or three weeks, sometimes, for a new starter to get its mojo working.

As a seasoned baker I'm sure you will have lots to add to the moveable discussions around here. Welcome aboard!

Hi! I was born and raised in Vancouver. Haven't been there in six years, though.

What flour do you use? I wanted my dad to bring me some and he brought some Whole foods, which was quite nice.

Right now I'm just using Robin Hood All-Purpose and Rogers Bread Flour. I haven't branched out into the "boutique" flours yet lol.

I too was raised in Vancouver.  Moved to TO for work but I visit as often as I can.  Good luck with the sourdough.

Mixed up the pre-ferment last night and woke up to frothy goodness, redolent of wheat and cider and I'm not sure what else. It's rising slowly- I've folded it once. Kind of winging it with this recipe. 

don
