Sarré Mill - Loire, France
We have just got back from a holiday near the Loire in France and discovered a local mill in a village called Sarré. One of the owners took us around the mill and we soon discovered that, against the grain, the mill had been converted from a steel roller process, back to stone grinding.
The mill now produces a range of organic (bio) and non-organic flours and also bakes its own bread. Tempted as ever with a new source of flour I came away with some strong white, wholemeal and rye flours to try. The old original part of the mill has two stones and is used to shown people the process. The two brothers who now run the mill have also developed a modern mill next door with seven granite stones.
Their various breads are made with quick acting baker's yeasts.
