Anyone add whole grain flour to journycakes?
I found out last after watching a Townsends Video on Johnnie Cakes. By whatever name they look like thick and denser pancakes without leavening.
So I open a Box of Jiffy's and try it on the Stove. It works, but works way better if a few teaspoons of flour is added to the batter.At first I used oat flour made from rolled oats with my blender. That is what I had on hand...
The purpose of this is to slow the spread of the batter on the skillet or Grill. I also add the butter or margarine to the batter as well. It just come out much better.
I brought some Whole Wheat and used that last night and the day before. Improves the taste.
Note: For those who do not know what Journeycakes are, they are simply a flatbread that is cooked on white ash, hot stone, or even a board with the cake expose to heat. AKA Ashcakes.
They are made whatever grains are grown in the Area. I thought this may help.
