20% Sprouted Spelt
I usually bake bread with 80% Bread flour and 20% whole-wheat flour. I bought sprouted spelt flour today and would like to use it instead of the 20% whole-wheat flour.
80% KA Bread flour
20% Sprouted spelt
75% water
2% Salt
20% levain (100% hydration)
Will it work? Do I need to do anything differently?
