Paul, I've written to the admin at Fresh Loaf because I do not see any link in my account to the PM section. Are you able to write to me by clicking "send by email" under my post?

Did your doctor consider the difference between sprouted and not? Changes it a lot. I see it commonly overlooked. Also how grains change under long fermentation like sourdough.

Good luck!

Thanks for the "good luck," Tyler! Yes, I understand what you're saying but I respect this website and would not want to say anything controversial or discuss the pros and cons of grains. Believe me, I love making bread and tortillas from heirloom corn (Masienda), etc.

Of course this opens some new doors, which is exciting! There's a lot of baking potential in lentils, cassava, potatoes, coconut, almonds, arrowroot, green banana flour, and more! There's a whole world of grain free recipes out there, enjoy

Yeah, I've had to become familiar with almond, besan, and coconut flour. I'd not heard of green banana flour so I'll check that out. Might even be able to make it with a dehydrator and Blendtec.
