for anyone new to sourdough baking (and even a few experienced bakers I'm sure) should read through this article, I discovered it on another post in one of the comments (thanks grandmamac) and I found it incredibly helpful, answered a lot of my questions and I now feel I have a better understanding of exactly what's going on in my dough.
