For creating dough from the starter, flour, water, etc., I do plan to do most by hand mixing/kneading (the "well" method). However, I would also like to use my food processor. I spent too much on it for it to collect dust.
For the processor, I've seen people use both the metal and plastic blades. Which is best? It would seem to me that the plastic was made specifically for this application. But, I've seen people use metal (most recently on a Julia Child PBS cooking show).
