Leader's Méteils au bleu

Since I'm not having any luck with making rye chops, I'm going to try Leader's Little Blue Cheese Rye Loaves from Local Breads. I see some discussion about this bread from a couple of years ago. Are there typos in Leader's recipes or just typos in posts for his recipes. I read something about Mini Oven and a red pen. Mini, if you could help me out here, I would appreciate it.

Thanks,

Pamela

Same recipe but with the addition of walnuts?  I've been thinking about this for too long now.  Sourdough smells something like roasted walnuts when cooling.  The thought of adding bleu cheese along with roasted walnuts sounds like a no brainer but I've learned that it doesn't always turn out that way. Guess I'll take the easy way out and wait for your results before kneading my own.

Hoping for good tidings to come. . . ,

Leader doesn't have any walnuts in this recipe or its variation, Pistachio and Golden Raisin Rye. I have some pistachios too, but with the recall I'm still debating on whether I should chance it. Wouldn't salmonella be killed by the heat of the oven? I have made Reinharts SD with Blue Cheese and Walnuts many times. It's a winner with such a lovely purple color from the nuts and a salty taste from the cheese.

I baked those last year, Pamela - there are no issues with that particular recipe.  They were lovely and also freeze well.  I should try them again, now that I know a bit more about what I'm doing.

However, there are major errors in other recipes in Leader's book.  You can find that thread in the books forum, under "Formula issues in Leader's Local Breads."

I'm still troubled by the fact that Leader made no effort to make any corrections, which he easily could have done at his website.

Thanks for the heads up on Local Breads. I'll check out that link and make the corrections.
