The Black Hamster
The Black Hamster was born in Germany, the son (or daughter?) of Bäcker Süpke. I don't think he ever published the recipe on his blog [1], but it was reverse engineered and published on Ketex [2] and Plötzblog [3], two German baking forums.
I've just made the Ploetzblog version and I'm pretty pleased with how it came out - a big solid loaf with big wholegrain and seed flavours. Recommended to try for a change, as a break from the world of open crumb,ears and bloom!
Next time I'll remember to put the sunflower seeds on the top as well as the bottom!
