Fragrant Swedish Rye
This has become a new favorite at our house. I found this recipe in the RSS feed and it is from Rosa's Yummy Yum's blog. She had adapted it from another blog site..and I in turn tweaked it to our liking. It has the zest of a whole orange, carraway and fennel seeds and sweetened with honey and brown sugar. It is just awesome toasted and I can imagine a great ham and swiss sandwich! By looking at the picture from her site, I think she must have use a light rye because her loaf is so much lighter in color than mine. I made the first loaf exactly to the recipe and it was very good toasted, but to my taste was too dense for a sandwich. This loaf represents my tweaking from strong flour (I used bread flour, is that the same?) to organic AP, used organic dark rye, added some vital gluten, and upped the yeast a bit. I would have tried it in my brotform, but I was out of rice flour and didn't want to chance wrecking it..the dough is a little tacky due to the honey. Check it out..I think you'll love it!!
