granulated sugar (or equivalent non-liquid sweetener of choice)
non-dairy milk (can use soy, almond, or rice, etc)
bananas, very ripe (mash completely so there are no large pieces)
Preheat oven to 350; spray 9x5" loaf pan with cooking oil spray or line pan with parchment paper
Mix dry ingredients (flour, baking powder, baking soda, sugar) together, set aside. Put the non-dairy milk, applesauce, vinegar, mashed bananas and vanilla in a large bowl and mix well. Slowly blend your dry ingredients into the wet ingredients. If batter is too stiff add more non-dairy milk.
Don’t over beat. Scrape batter into prepared pan.
Bake for 40 minutes. Allow bread to cool completely before slicing.
I don't use salt but many recipes call for 1 teaspoon
