I am impressed by the assortment of flours available off the shelf at the local Whole Foods market: Barley, whole rye, almond, quinoa, buckwheat and more from King Arthur, Arrowhead Mills and Bob's Red Mill and house-brand wheat flours. Spelt! Did I mention they have spelt?!
BTW, it is a LOT cheaper to buy almond flour than to buy slivered almonds and grind them yourself.
Should make some pretty good sourdough I'm hopin'.
