baking in the evenings
i would like to increase the number of times i bake in a week. this means baking in the evenings of days that i work.
anyone have suggestions on when to make preferments, refridgerating them, etc. and making it work?
specifically, hamelman's pain rustique.
i can make the preferment any time the day before. and i get home from work at 530.
