A bit counter-cultural on a site like this, but I need somewhere to rant!
Why can't the manufacturers of bread making machines let us put our own breadmaking programs into the machine so they mix and knead for as long as the contents require? All the manufacturers seem to assume that we all use wheat flour, and base all the programs on the kneading and proving required by it. I've recently found I have to use wheat free diets, but don't want to chuck out the baby (Rye, Barley etc) with the bath water. Which Wheat based program would you use to make a bread made with Dark Rye (which needs no kneading, but lots of time to rise) and Spelt (which needs little kneading)?
Surely they could allow the user to write the program(s) and give some standard times for the various breads in the product's intruction manual?
ps I need the machine because my epilepsy makes me incapable of doing the bread by hand for days on end.
