rye starter miche

locally I buy one that is no doubt from one of NYC better bread bakeries.

it's tangy, crusty with a slightly spongy crumb.

Has any one a recipe to post for something like this?

Mostly what I've seen here has spelt which wasn't in the ingredients list.
