I was inspired by Butler's pictures of the sourdough potato bread, so I thought I would make an attempt this weekend. Overall, I thought it came out pretty good, but it did not have the big holes and was a little heavy. I am wondering if I didn't let it proof enough at room temperature, since most of the proofing was done in the refrigerator. I used KA AP flour with 100% hydration sourdough starter. I am also wondering if I should add more water next time, and start out with a wetter dough.
