Wheat-Free but not Gluten-Free
I am looking for a good sandwich bread recipe that does not contain wheat (or spelt or kamut) flour. My son has a medical condition called eospinophilic esophagitis, in which wheat causes inflammation in his esophagus. He does not have Celiac Disease so gluten is ok. He can have any other type of flour (ie. rye, barley, oat, sorghum, millet, etc.) Is there any good whole grain, healthy, yet tasty bread recipe out there? I've tried some of the gluten free store bought breads (usually made with rice flour) and they are not very good...in fact, they are horrible. Any help would be greatly appreciated!
