smell of sourdough question
Hello, i have had the camaldoli starter now for a few years and i know the smell of it in the fridge when it is dormant -- it is a very nice and sweet smell.
a couple of weeks ago, i started a wild starter using just flour and water. it went well. but in the fridge while dormant it smells nice and sweet just like the camaldoli.
any thoughts? did my wild yeast get taken over?
