Rye Flour
LindyD posted a great link to theĀ Flour Treatise [1] in another thread. I was looking through the information on the classification of rye flour, but don't exactly understand what the chart means. I grind my own rye flour. So what do I have? Dark rye? If so, what does "limited to 20% flour blend before significant volume reduction occurs in the product" mean?
