help with sifting!
Howdy
I just started making bread and I am looking for a way to sift out the bran from my flour. My first batch was pathetic but my second loaf showed some promise. The wheat flower just doesnt seem to want to rise enough. I am milling hard red winter wheat and so far no luck at getting the bran out. I really have no idea what I am doing so any advice is appreciated. I am using an old recipe from my grandmother.
Thanks

I use an ordinary sieve and am able to get most of the bran out of the whole wheat flour, but not all of course. If I wanted all the bran out, I'd use unbleached white flour.
Bill Wraith has written extensively on the subject in his blog here. This will give you a good lead http://www.thefreshloaf.com/node/5918/flour-milling-lab-results
