In all serousness, I can't emphacize strongly enough how important quality training is to the craft. This guy in the video, Carlos, is another "Star" alumnus from my alma mater, Dunwoody Institute. Next stop VEGAS and the Cirque de Soleil. I'm still working dilligently on correct dough hydration for my audition.
Being the esteemed alumnus that you are, perhaps you could put in a good word for me on my application for a scholarship to the Dunwoody Institute. I really need the dough!

ah, that's nothing, hehe! that's pretty much how i twirl my 70% rye doughs.
So will this be the thread to motivate and inspire our next huge group bake..throwing the pie? I'll be the one with dough on my head!
After a week of diligently practicing this twirling routine I've determined that the twirling is a bit less dicey BEFORE you apply the sauce and toppings :>)
