Thank you for noticing

2 different bake days, a week apart.  Poolish preferments done the night before.  I did it in 2 bakes of 18 loaves each. I froze the first batch and reheated them during the last 2 hrs of my last bake.  Timing of the rising was the trick, by cooking the loaves 2 at  a time, this can become problematic.  I do have 2 kitchens , and when the rising gets ahead of me I put 2 ovens to use.
