Does Glossy crumb equal Sour?


I have noticed that my sour tasting loafs tend to have glossy lustrous holes.   Less sour seems to lack the luster.

Whaddaya Think?  Come on...is there a connection?

I would have to agree with you! The ones I produce that are the best are the ones with a translucency to the crumb.
