A quick review of the fresh loaf book:
1- informative.
2- kneading method: hands.
3- dilicious photos.
4-all most if not all the recipes aer done with fresh yeast. But the author tells you how to replace the fresh yeast with dry active yeast.
5- some recipes require natural leaven
