Cinnamon bun recipe
Hi all, I am new here, and I hoping that someone will have the recipe I am looking for. I used to work at a coffee shop while in college and we got these cinnamon buns in that we more like shortbread or shortcake dough, almost cookie like but cake like. They were dense and not as fluffy as a regular cinnamon bun. They also didn't have any glaze od any kind. Has anyone had something similar or made them? Thanks for your help...




I am not sure but i think what you are looking for is a combination biscut
this is a dough that has both yeast and baking powder
the yeast works first and the baking powder takes over in the oven for assed rise and a shory bread like feel and tast
the formula folows (again sorry for the amounts but you can make a half or a quarter of the formula)
water 1 lb
yeast fresh cake 4 oz
dissolve and set aside
Sugar 10 oz
salt 1 oz
milk powder 4 oz
shortening 8 oz
Mix this to a smoth paste
eggs 4 oz (2 large)
water 1 lb
Add to the sugar and shortening paste
Cake flour 1 LB
Bread flour 2 lb 10 oz
Baking powder 1 Oz
Add and mix lightly then add the yeast and water and mix to a smoth dough
allow to rise once and then shape into a rectqngle
let rest 10 minutes and roll out and shap as a cinnamon bun
plase the cut buns on a pan and let rise untill thay feel spongy
(about half proof)
egg wash the tops and bake at 350 till brown in top
Note you can replace the 1 lb of water in the dough for 1 lb of butter milk for better flavor if you do this reduce the milk powder to 2 oz

Glazed Cinnamon Biscuits Buns
INGREDIENTS
1. 2 cups all-purpose flour
2. 4 teaspoons baking powder
3. 1/2 teaspoon salt
4. 6 tablespoons butter or margarine, divided
5. 3/4 cup milk
6. 1/4 cup sugar
7. 1 teaspoon ground cinnamon
8. GLAZE:
9. 1 cup confectioners' sugar
10. 1 tablespoon butter or margarine, melted
11. 5 teaspoons milk
12. 1/8 teaspoon vanilla extract
DIRECTIONS
13. In a large bowl, combine dry ingredients. Cut in 4 tablespoons of the butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn onto a lightly floured surface; knead gently 8 to 10 times. Roll into an 11-in. x 8-in. rectangle about 1/2 in. thick. Melt remaining butter; brush 1 tablespoon over dough. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with long edge. Cut into 12 equal slices. Place with cut side down in a greased 8-in. square baking pan. Brush with remaining butter.
Bake at 450 degrees F for 18 to 20 minutes or until golden brown.
Cool for 5 minutes. Combine glaze ingredients; spread over warm biscuits. Serve immediately.
One of my fav things growing up was cinnamon buns made with biscuit dough. Thanks for the reminder. We always rolled up raisins in there, too! This looks like next Sunday morning's splurge breakfast to me.
