Breads in a Toaster oven?

Odd situation, I know-- trying to bake decent bread in a toaster oven... I mean come on, it's already challenging enough sometimes to get bread to come out how you want it in a conventional kitchen oven.   But I'm trying to bake in my Montessori classroom, and don't have access to a real oven there.  We've done corn muffins a couple times with good results, and I'm sure most quick breads will work ok, if I adapt for altitude (we're a mile above sea level here).  But does anyone have suggestions for a yeast bread that could be done?  Baking itty bitty loaves is ok with me! Thanks!
