the transfer from couche to peel
Has anyone come across a video that shows this being done? We never used the couche at school -- just pans and baskets. I did find a couple of print descriptions online, but would like to see someone do this in a skillful way. Thanks!

Heh, I just cheat and put some parchment paper under the bread, on the couche. So once the bread is done rising in the couche, it's a simple slide operation to transfer the bread onto a peel (or in my case, the back of a sheet pan).
OOC, am I the only who does this?
Hi, apprentice.
Here is a cool video from youtube:

There is a lot to learn from this video, but it goes really fast. If you want a verbal description of the process, I'll attempt one.

Wow! I stepped out for a couple of hours and here you all are. Ask and you shall receive? :)
It may be a day or so before I can get there and view them with proper attention. So much on the go before starting a short holiday on Tuesday, including a couple of blog entries I want to finalize. Looking forward to it! Thanks again.
