Potassium Sorbate?

I was reading about this product in a catalog online, it said this stuff keep bread fresher etc, does anyone know about this or use it? I saw it on kitchenkrafts.com. TIA

It's a preservative.

I don't use it because I don't want any additives in my bread.

Yeast Killer

We use potassium sorbate at work to stop the fermentation of the yeast.  I'm not sure how you would use it in bread and still get your yeast to work.
