I haven't seen any posts from Bill Wraith here in a couple months. He gives such clear explainations and was very helpful when I was getting my starter going. I don't know him, but wondered if he'll be back.
Marni, I recall his posting that he was going on a hiking vacation in some remote rain forest - or somewhere exotic. Not sure of the date of that post, but I think it was more recent than two months.
ETA: I Googled Bills' name and discovered he is back from the trip. As he is also a sailor, the ocean is probably more tantalizing right now than baking bread.

I think I recall him writing, in one of his posts, he was going on an extended sailing trip and he posted some photos of bread he had made while on the boat. Bill is so knowledgable and a genuinely nice, helpful person. He's a great asset to this site. He's the one who introduced me to the "stretch and fold" technique (thank you Bill, if you're out there) thorough a short video he posted on this site. Sure hope he returns soon.

If we are thinking of the same video, I also found it very helpful. I think that's when I learned that wetting your hands first is a great option, rather than flouring and adding in more unwanted flour to the dough.
Yes, it's the same video, where Bill wets the counter and his hands and NO additional flour...short video but really a winner. I remember commenting to Bill on how neat and clean he kept his work area. His sure doesn't look like mine :-) Hope he's back soon.
