I was searching for some information relating to my bakers course when I stumbled upon the Bread and Breadmaking book. I could only find it available on the Internet Archive.

Wow!

Very interesting and informative read.

Kinda undermines my faith in "throwing it all together" BUT guess as I practise more, things like hydration and "feeling" when the dough is good are becoming more natural.
